If you're using the Send Mail script in FileMaker Pro with Outlook for Mac there's an issue with the carriage returns and the html format.
Try replacing the FileMaker carriage returns with an html equivalent using the Substitute function, e.g.
Substitute ( email_body_field ; "¶" ; "<br/>" )
This has worked for me in the past.

Glad to be of assistance. I was working with Outlook 2011 for Mac yesterday with the Send Mail script step myself and also noticed that you cannot just create a new blank email with the recipients address - you must also enter the Message field. I haven't used this script step for a while and can't remember if it's always been like this but seems strange you can't just create a new blank email and have the user enter the Subject and Message in the email application.
