If all you need is for this particular date field to display in that format, all you need to do is change the display formatting of the field on the layout.
Switch to Layout mode (Command/Control-L). Click on the date field. Open the Inspector's 'Data' tab (Command/Control-3). The Data Formatting
section at the bottom has a calendar button that should be selected for this date field. There, you can change the formatting of the date
display as desired.
However, you might also consider changing the date formatting for the computer, using the system's control panel, if the ISO 8601 format is a standard at your location (why it isn't everywhere by now, I don't know!)

Okay, I have changed my personal system settings to ISO 8601 format now, so this works perfectly fine for me. The only thing I am wondering - if I run an export to Excel, these dates would look good to me. However, if I then have to distribute these Excel files how can I guarantee that these would also appear in ISO 8601 format for the recipient too...?

Have you tried exporting in a text format rather than in an excel format? This usually prevents the date from being changed.
Yes this worked. I exported as text and then converted that to xls and worked.
