Probably depends on where you're located. I'm in the USA and I've had great experience with ODI Tech (http://www.oditech.com). They have servers across the US and even one somewhere in Europe.
Plus I see the owner and some of the employees every month at our local FMPug meeting.
Since FMS 13 was released, I switched to a new service (at least new for me) called FMPHost (FileMaker Hosting Pros). I've got 4 clients there now, and may be adding more in the future. They cost (for basic hosing for 1 db) $20/mo, and that price goes down the more databases (or in my case, clients) I have posted there.
My favorite feature about their website is they don't charge any extra for unlimited concurrent WebDirect / iPhone or iPad (FileMaker Go) connections. That's my FAVORITE feature of this site!!
They have servers in LA & Atlanta, GA, as well as in Europe and other countries.
I've had no problems while using their service, and I get free support 7 days / week.

+1 on GAmstutz suggestion. I have 3 clients who use them. They're the cheapest you'll find and the service is excellent. There is always someone to answer the phone and they're very friendly. I use them myself when I need an extra server.
Another +1 for FMPHost. Very good service, on demand backups, and they have a server in London.

Yes, I'm still satisfied. I think they had a couple of outages (both late night) in spring and early summer on their server in Atlanta (I have clients using their LA and Atlanta servers) and a couple of our clients (i.e. in health care) were using that system 24 / 7 on their Atlanta server, so that did present a bit of a problem for us a couple of times. The second time this happened, when i called FMPHost, I just got an answering service, with no call back. But service was restored by the morning.
I've used other FM services for a couple of years without a single hour of down time, so FMP Host perhaps is not the most reliable (at least not yet). But I know they're working improving they're systems (and adding more servers in more countries all the time). When I do call and talk to somone there, they're always very helpful, and (unless a crises is happening with their servers), almost always reach someone or get an immediate call back.
I once wrote and asked FMPHost if they could setup Server Scripting Schedules for me (perhaps setup a midnight schedule to run every night, and I use that schduled server script to call other script). The respose was I can't set that up myself (not yet), but they could do that for me. They seem more than willing to help in any way possible, so I give tham an A+ for customer support!
Again, I'm hooked with FMPHost because of their unlimited iPad / iPhone / Webdirect connections for about $20/mo (or less per month for more systems). I'm wiling to put up with an occassional glitch for that kind of value and service.
I highly recommend them, and now send all my higher-end clients to them -- that is, when I don't have the bandwidth to host a particular FM client's needs on my own inhouse server, or one particular client may want reliability that's a step above what I can provide from my own office's FM server.
Though in all fairness there were some instances the past several months that large areas of Atlanta were experiencing outages. Our parent company is based in Atlanta and we experienced outages, and they run their own datacenter.
