How do you create a log of record modifications in a separate file?

Basically I work at a small company and am going to start data basing for them. I am going to be the database admin and will give them all accounts in which they can access they database with read and write permissions. Since multiple people will be working with the same file i want to have a way to cross reference who did what and when. So essentially I believe i want to understand how to make a script that will trigger anytime a field is modified and capture who did it, when,the lineage of the record, what the record said originally, and what the record was changed to. When the person then closes the database I would want to have another trigger go off that than takes all this stored information and creates a table with it and sorts it by time-stamp. Finally I would want this table to be saved into a text file to keep a log of changes made to the database. Any suggestions as how to go about this?
