One optione : Try to code the "syncing" in a seperate file/database. For Example ; your customer has on his iPad 2 offline files, the main one and the sync one.. Then when syncing open the "sync-database" on the iPad which has the clients server adress etc.
When developing you use your own sync-database. You can leave the sync-database on the client iPad once setup.
Another option is code 2 separate external data sources: one for development the other for production. Just add a if then else construction to use the one or the other.

The idea in the second file is to have TOs to the server file and to the iPad data file.
Now you can script, in this second file, finding records in either file and setting records in either file.
For instance, find on iPad the unsynced files.
Go to first record
set variable $ID to the record id of the IPad recore
go to layout in remote table
set field ID to $ID
set field xxx's to matching fields in iPad table
go to ipad layout
set field it was export to timestamp
next record exit after last
This will transfer all new records to your remote file. You can add your own errorchecking,etc.
You could import if you are brave. But an import doesn't let you timestamp the succesfull transfers.
