Because when a number is converted to text, Filemaker will use scientific notation where it thinks appropriate. The value list is text. It is a list of names, and 1 name displays in the field as scientific notation. It is not the longest name in the value list either. If you click on that field it will show the correct name.

Perhaps we do not mean the same thing when we say "scientific notation". Could you provide an exact and detailed description of the issue?
I'd suggest also describing how your value list is set up.
Are they custom values?
Are they drawn from a field in a table somewhere?
If so, what data type is the field that supplies the values?
I am drawing from a field in another table, but when i went back to look at the relationships i realized that one of the fields was set for a number, so after switching it to text, that fixed my problem! I just didn't notice it at first because not all my values were changing to numbers. Thanks for all the help!
