Use Get ( FoundCount ) for the number of found records.
Thanks for the super-speedy reply. However, that seems to display the total number of records in my database. To explain further:
My database is for student records. I have 469 total student records. My main layout is set up to display by default only currently enrolled students, of which there are 132. This is the number I would like to display (which would of course change as I further constrain the list, into groups of enrolled students, for example).
The Get ( FoundCount ) instruction is currently displaying the full total of 469.
If Get ( FoundCount ) is displaying 469, then your current found set consists of 469 records. Compare this number to the first number shown next to the Green Pie Chart in the status area it should be the same. If you perform a find to pull up all currently enrolled students, you should see 132 / 469 next to the pie chart and Get ( FoundCount ) will return 132.
The green pie chart was displaying 132 / 469, however Get ( FoundCount) was still displaying 469. I created a new record, this time the correct FoundCount was shown, in this new record only.
I then remembered the solution to a previous post - in Storage options I checked the 'Do not store calculation results -- recalculate when needed' box. All records now display the correct information.

Yep, since you had the current record number showing correctly, I assumed, incorrectly, that you knew to set storage options to "Unstored". Muy bad in making that assumption.
