In the starter solution the field(s) that make up the row have been turned into buttons. That's why you see the cursor change. When you click, you are clicking a button that takes you from the layout designed for list view to a different layout designed for form view.

I saw there is some selectable object but it wasn't possible to show context menu with right click, so I couldn't look at settings on that object - button and find out how it works. What I did find out now, is that if I give that button in "Expense Reports | iPhone" some fill color, it will show context menu by right clicking it.
In layout mode, you can double click a button to open the button setup dialog to see how it is set up. You can also select an object and select Button Setup from the Layouts menu.
But this can get a bit tricky on some starter solution layouts. In some cases an object has be set up as a button and placed behind the fields with the fields in front set with Inspector, behavior settings to deny browse mode access. You may want to use duplicate layout to make a copy of the layout and then try moving things to get to the button if you can't manage to double click the button to get to button setup.
