Use either two layouts, one with the field formatted as an edit box and one formatted with the value list. Have a script change layouts to fit the response format as the respondent works through the questions on a form view layout.
Or have two copies of the field on a single layout with one formatted as an edit box and the other with a yes/no value list. Use Hide Object When (fileMaker 13) or other methods (Older versions) to control which copy of the response field is visible for a given question.

One other question for you...is it possible to have a comments field for each question? I added a comments field to the responses layout but there's no way to identify which question the comment applies to.
If it's in the responses table, then it, like the respondent's response field should be linked to the question via your relationships and thus you should be able to tell which question goes with a given comment.
