If you are using filemaker 10 or 11, you can use a script trigger for this:
Edit boxes and drop down lists: Use OnObjectExit.
PopUp menus, radio buttons and check boxes: Use OnObjectModify
That would work perfectly for me, except that my business still uses Filemaker 7. Do you know if there is anyway to do this without using script triggers. If not this might be a reason to convince my boss to upgrade to FMP11.

In older versions, you might write a script that sets the field to "quoted" and then logs the info in the related table.
You'd then place this button on your layout. If you field is formatted with radio buttons, you might even take the field out of the tab order and place transparent buttons over each radio button value. Each button would run a different script step to set the field with the desired value, the "quoted" button would run the script I've already described.
